Known for its mighty size, the bison calls to mind the typical setting of western movies, not by chance has always been the animal at the centre of the life of the Indians.
Even today, the bison lives freely in the vast American meadows, feeding on herbs and minerals that make its meat much better and healthier than beef. Bison meat is one of the most prized and sought-after, especially by the most refined palates.
With a brilliant appearance and a rich and decisive taste, it is a very lean and naturally tender meat.
There are many properties that make it an excellent ally for health.
Highly nutritious, with almost 70% more iron than beef, it has very little saturated fat and cholesterol. Very protein-rich, bison meat is also particularly rich in phosphorus, copper, zinc and vitamins B6 and B12, essential for the immune system. Finally, the abundant amount of Omega 3 and Omega 6 makes the bison meat much more like fish; hence the nickname “salmon of the prairie”.
To savour all its goodness, the best method is to obtain rather high and juicy steaks to be simply cooked on the grill and preferably rare.
